Edgy Veggies (Vegan)

Make dinner easy tonight by prepping these veggies during your “Veggie Day”. I always have one day a week reserved for chopping up these colorful yummies (Veggie Day). Chopping vegetables can be discouraging when cooking a healthy dinner, so why not do it ahead of time to give you a breather during the busy week! My Edgy Veggies typically include Organic Brussel Sprouts, Organic Broccoli and Organic Potatoes.

Start by chopping your Broccoli into small trees, your Brussels in half and your Potatoes as small as you can get them (size of your fingernail if possible).

Brussels 

Add 2 Tbsp. of Trader Joes Soyaki per Head of Broccoli that you use, mix it all in, and sprinkle 1 Tsp. of Roasted Sesame Seeds on top.

-2 Tbsp. of Trader Joes Soyaki

-1 Tsp. Roasted Sesame Seeds

 

Place in your preheated oven of 400 degrees and allow them to cook for 20 minutes, stirring at the 10 minute mark.

Remove from the oven and serve! They may look a little “charred”, don’t worry, it’s just what the sauce does when it cooks, they should not taste burnt at all 🙂

Potatoes

Now for your Potatoes (approx. 6 small potatoes will do), after they are chopped place them in a baking dish.

Sprinkle 2 Tbsp. EVOO, 2 Tsp. Garlic Salt and 4 Tsp. Oregano, mix well.

-2 Tbsp. EVOO

-2 Tsp. Garlic Salt

-4 Tsp. Oregano

Place in your oven at 400 degrees and let it cook for the next 45 minutes. These potatoes take a bit longer so just make sure to adjust for that in your meal prep time. Stir half way in between, and serve hot 🙂

Broccoli

Now time for your tiny trees! Pre heat a pan on the stove with moderate heat.

Spray a bit of non stick EVOO on the bottom and throw the Broccoli in. Let it sauté with no lid until it has browned but prior to the broccoli wilting (approx. 5-10 minutes). Stir in 2 Tbsp. Trader Joes Soyaki and 1 Tsp. Roasted Sesame Seeds.

Allow it cook in, then remove from the heat and serve!
